The great cheeses of the region
There are Ticino jewels that don’t shine on ladies’ fingers, but in the dishes of the I Due Sud restaurant.
Like the whole of Switzerland, our region has its own excellent cheeses that can win over all palates, between savoury and sweet.
For example, Ticino AOP alpine cheese, which is one of the key ingredients of the dish “La Sila e le Alpi”, proposed in the vegetarian menu. In this case, there is the utmost respect for the raw ingredient by the chef who offers the pure product, to be tasted just as the good cheesemaker made it.
But there is also the famous Zincarlin, a Slow Food Presidium, which with its intensely spicy flavour is a miniature artisan masterpiece with a big personality. Precisely because of these strong characteristics, in the kitchen of “I Due Sud”, it is used to create foams and creams that mellow its intensity.
