Giovanni Baietta

From the Orient Express to the Splendide, via Australia, Hong Kong and a variety of experiences on four continents, Giovanni Baietta is now the headwaiter of I Due Sud. He arrived in Lugano after ten years of gaining professional experience in large hotels and restaurants, including a Michelin three-star establishment. His training is the result of day-to-day work in the field: it is training by example, through teaching and “advice stolen” from all his great colleagues. As he himself confesses, “I learnt something from each of them. This is a profession based on practice not theory, and the dining room has been my training ground. I don’t think there’s such a thing as a universally perfect service, it has to be tailor-made each time a guest enters the room. When someone enters the room, I try to understand what makes them tick and I tailor my service around this”. Giovanni will help you to enjoy your gourmet experience at the Splendide in a light, discreet manner.
