Stéphane Bouillet began his career at Le Bristol hotel in Paris. It was where he discovered the Arts of the table, the elegance of service and French haute cuisine alongside chef Eric Frechon.
A lover of travels, he left France to live in Australia in order to perfect his English and in Mexico to discover its people and its gastronomy.
A few years later, he decided to settle in Fontainebleau at L’Axel restaurant where he met his mentors Vanessa Blondeau and Sophie Donzeau who transmitted to him the rigor of Michelin starred service but also the passion for wines, warm and human service. He also worked there with the Japanese chef Kunihisa Goto and continued his evolution there for several years.
Finally in November 2022, he takes the reins of Ristorante Tosca, Relais&Chateaux led by the chef Raffaele de Mase where he brings his warmth, generous hospitality and experience acquired during these years.
