Vito GRIPPA was born on 29 December 1974 in Rome. He was to enjoy several stays at the most beautiful Roman addresses. He started at young age at the Hotel Cristallo, then at the Regina Baglioni before leaving for the United States for a few months, but the Chef quickly returned to his eternal Rome to round off his classes, notably winning first place as sous-Chef at the Hotel d’Inghilterra. When he joined Hotel Splendide Royal in Rome at the time of its opening, the Chef met someone who would affect his career for years to come. Alongside Chef Giuseppe SESTITO, Vito contributed in creating menus for the starred restaurant he works in. After his time at the Posta Vecchia, Vito rubbed shoulders with the Hotel de Russie, then the Forty Seven Hotel, as Executive Chef, before arriving in Paris and taking up his new challenges.
