Combining Italian gastronomy with the art of the service “A la française”
For Pierre, the “art of hospitality” is a family affair.
Originally from Toulouse, Pierre grew up with a hotelier father who passed on his passion for the restaurant business to him and thanks to whom he traveled a lot.
In 2007, he joined the prestigious Paul Bocuse hotel school in Lyon.
In 2008, during a sommelier internship at Plaza Athénée, he discovered a real passion for wine.
His new challenge: bringing wine to life at the table by finding the perfect match with the dishes served.
In parallel with the hotel school, he is preparing a diploma at the “University of Wine”, then the WSET in 2020.
Pierre subsequently worked for great chefs such as Alain Ducasse, Gordon Ramsay and Yannick Alléno.
Thanks to the latter, he became room manager and head sommelier at “STAY”, a gourmet restaurant in a luxury hotel in Dubai, an experience that he perfected in sommellerie and which gave him the conviction that this profession is his life!
At Tosca, Pierre is the new Director and Head Sommelier.
He will surprise you with his list of Italian wines that he has selected according to his favorites and the best Italian winegrowers.
He takes pleasure in receiving his clients as “guests”. Her sense of listening and hospitality places her guests at the heart of the experience, while marrying Italian gastronomy with the service “A la française”.
