SELECTION OF TEA

IMPERIAL WHITE TEA FROM CHINA
Bai Mu Dan
(2-3')
Fine white tea grown in the plantations of the Fujian province, it is made with a combination of buds, called Yin Zen (silver needles) and of the first two growing whole leaves, tender, of a subtle nephrite color. The soft leaves and buds are carefully handpicked, then let wither and dried without direct exposure to heat. This ancient handling ritual, keeps almost unaltered the numerous healthy properties of the plant. During the tea making process, the scent of this tea will remind that of the flower called “Bai Mu Dan”, or “white peony”. Its taste is exquisite, gentle and refreshing. This is a sweet, fine tea, wonderful in the afternoon, but which can be enjoyed any time of the day. To avoid altering its beneficial properties or the characteristic taste, we suggest not to add any milk, lemon, sugar or honey. This beverage of rare daintiness was originally reserved to the exclusive use of the emperor, who would offer it to his guests only in occasion of the most important receptions. Apparently, Robert Fortune, the famous Scottish botanist and traveller best known for introducing tea plants from China to India, was the first occidental having the honor of tasting this absolute rarity.
